Baked Firecracker Chicken

Spicy foods and I have a complicated relationship. While I love nothing better than a recipe that’s kicked up a notch, I usually regret consuming the fire kissed flavors when they keep me up at night with indigestion or occasional heartburn and sleeplessness. But sometimes, there’s just no denying the call of spicy sweet flavors; especially this Baked Firecracker Chicken recipe and when I have Alka-SeltzerĀ® PM Gummies on my side, I don’t even need to think twice about that occasional nighttime heartburn with sleeplessness.

I start by adding hot sauce, brown sugar, apple cider vinegar, salt, garlic, and red pepper flakes to a saucepan and I cook it over medium high heat until it comes to a boil. Then I reduce the heat to low and let it simmer for about ten minutes. Then I remove the sauce from the heat and set it aside to thicken as it cools.

Next I season some chicken tender slices with salt and pepper and sear them on each side in a skillet for about one minute per side.

I remove the tenders from the skillet and place them on a baking sheet and pop them into a preheated 400F degree oven for five minutes.

Then I remove them from the oven and baste them in the sauce, flipping each tender to coat completely and reserving some sauce to serve with the chicken. Then they go back into the oven for another fifteen minutes or until the internal temperature reached 165F degrees.

Once the chicken is done, I remove it from the oven and allow it to cool before serving, which is easier said than done, ha! These sticky sweet tenders are full of delicious flavor and sweet chili spice. They’re positively irresistible and while they offer a slightly spicy flavor, it’s nothing crazy. No nose drips or watery eyes, just some gentle sweet and spicy kick.
